Our bistro is designed to pamper you: a warm and cheerful space where gastronomy is enjoyed slowly, with soul and with memory.

 

Each dish is born from the freshness of the countryside, from seasonal products, local ingredients, and recipes passed down through generations, all crafted with a deep love for the land that surrounds us.

 

Here you’ll find authentic flavors, reinterpreted with a creative touch by hands that cook with true passion.

On the privileged slopes of the Sierra, where biodiversity meets the Caribbean breeze, our high-altitude organic coffee is born. Grown among native forests and spring-fed waters, each bean reflects the authentic character of La Victoria’s coffee.

 

Our varieties tell their own stories:

Colombia: Sweet and aromatic, with notes of caramel and ripe fruit.

Castillo: Complex and versatile, with citrus and cocoa undertones.

Caturra: Vibrant and floral, with a sweetness reminiscent of panela and honey.

High-Altitude Arabica: Elegant, with hints of white flowers and red berries.

 

Our commitment to renewal:

Every year, we plant around 50,000 new coffee trees, all grown from our own nurseries. This process ensures genetic quality, adaptation to the territory, and the continuity of our sustainable agricultural practices, guaranteeing that every new generation of plants preserves the unique character of our high-altitude coffee.

 

Our processes ensure excellence:

At our traditional beneficio, one of the most emblematic in the Sierra Nevada, we preserve historic methods and equipment that safeguard quality and authenticity at every stage. Same-day pulping and controlled fermentation standardize the coffee’s sensory expression. Washing with pure mountain water provides freshness and clarity to the beans, along with an optimized selection of top quality. Drying in our traditional guardiolas allows for a uniform process and the preservation of natural aromas and sugars, regardless of the weather. In our traditional roastery, each batch is carefully roasted to highlight the nuances and aromas of every bean.

Birdwatching in La Victoria is a unique experience, enriched by the extraordinary diversity of ecosystems in the Sierra Nevada, a UNESCO Biosphere Reserve. This privileged territory is home to an impressive variety of species, many of them endemic, meaning they exist nowhere else on the planet.

 

Our farm features trails that wind through our magnificent coffee plantations and strategically placed viewpoints, designed to offer the best viewing conditions. The tranquility of the surroundings, free from artificial noise, allows for an authentic connection with nature and the majestic birds that inhabit this paradise.

With altitudes ranging from 800 to over 2,000 meters above sea level, La Victoria offers a variety of microclimates and habitats.

Daily schedules: 6:00 am and 4:00 pm

Duration: 2 and a half hours
